My first Tahini sauce

Tahini is very, very simple to make! It is practically the same process as making a nut butter like peanut butter!

Ingredients :

140 g of sesame seeds

15 g of Extra virgin olive oil

8 g of salt

How to make :

1. Throw seeds into a wide, dry saucepan over medium-low heat then stir constantly with a spoon until the seeds darken ever so slightly in color and become fragrant.

2. Once the sesame seeds have cooled, throw them into the bowl of the food processor, shut the lid then process until a crumbly paste begins to form.

3. Next, to help the tahini come to an extra smooth paste, we add a few tablespoons of olive oil. After more processing, a few stops to scrape the bottom and sides of the bowl and a little more processing after that.

4. Add some salt

5. A little more processing after that again - the tahini is done!!!

I find tahini to be so much more versatile and neutral than other nut or seed butters. Meanwhile, it can add smooth creaminess to a whole slew of recipes, hummus included.

Here’s a small sampling of things you can do with tahini

1. Salad dressing.

2. Toast.I especially like to top it with fresh tomatoes, sprinkled with sea salt and a turn of pepper.

3. Pasta salad.

4. Soups (hot or cold)
